Fiesta Favourites! Birthday Dinner and Easy Sangria


 
 

A while back, it was my mother-in-law’s birthday. We decided to visit her and make her a nice dinner. Hubby and I hemmed and hawed and finally decided on a Mexican theme (no special reason, just because we all like it and had some of the ingredients in the house).

 
 

Birthday Fiesta Menu

Appetizer

PC Salsa Fresca Flavoured Kettle Style Tortilla Chips
PC White Corn and Black Bean Salsa
PC Salsa Con Queso Cheddar Cheese Dip

Dinner

Mexican Bean Salad with Citrus Dressing

Fiesta Baked Pasta Casserole (inspired by Fiesta Stuffed Pasta Shells from Kraft Canada) – Recipe coming soon!

Sangria

Ingredients

  • 1 chilled bottle of Sangria or your favourite wine (red, white or rosé)
  • 1 orange
  • 1 lemon
  • 1 lime
  • 2 cups of club soda or gingerale

Directions

Slice the orange, lemon and lime (with peels; wash fruit first).
Add ice and sliced fruit to a pitcher, add chilled bottled sangria (or wine).
Chill until ready to serve. Delicious and refreshing!

Dessert

The “Mexican” theme went over well and everyone enjoyed the dinner!
